DINNER-TO-DELIVER.

Good Morning.

We are rounding up a busy, busy two weeks. We've had family in town both weekends since returning home and it's felt a little crazy. This week presents normalcy and getting caught up on life. Menu planning, grocery shopping, cleaning and finishing a tu-tu for a butterfly costume top my list of things-to-do. Nothing fancy, just the regular routine of a regular mom.

One item on the list is to take dinner to a neighbor in our ward this week. I don't often do this and have been racking my brain for the best dinner-to-deliver. Then it hit me, I've got a great resource in my fellow mamas. Do you have a go-to recipe or dinner idea that you always use when asked to take dinner to a family or friend? What travels well and is sure to be a hit with the kids?

Hi! I have a yummy creamy chicken noodle soup recipe that the kiddies love and adults alike, and it tis the season for soups. So here is the recipe, hopefully it will help.
6 frozen chicken breast
3 cups water
3 chicken bouillon cubes
2 cups chopped celery
2 cups chopped carrots
1 chopped onion
2 cans cream of chicken soup
1 cup milk
4 cups cooked chicken
1/2 pkg. cooked noodles
Put frozen chicken breast in a pan with 1/2 cube of butter and 1 to 2 cups water, cover and cook on medium heat until chicken in done(about 20 to 30 minutes if chicken is frozen, less time if chicken is thawed(. Drain chicken, let cool. Boil together the next 5 ingredients until vegetables are tender. Add 2 cans cream of chicken soup and 1 cup of milk, 4 cups of cubed cooked chicken. Cook noodles according to pkg. Add to soup. Serves about 4-6
*sometimes if i have it, i use chicken broth instead of the bouillon cubes and water to boil the veggies in, just because it's easier. And the recipe says it feeds 4-6 but I think it serves more than that, like maybe 8.

I always take chicken enchilladas. I have a great recipe. I'm sure you probably have a chicken enchillada recipe, but if are interested in mine, just email me and I can give it to you :)

i either make garlic chicken farfalle or honey lime chicken enchilada's. the husband's usually prefer the enchilada's

Recently, neighbors have brought us baked spaghetti, white chili, broccoli cheese soup, and taco soup. They were all great!

Hey Erin! I always call the person I'm taking dinner to first to see if there is something specific they would like for dinner or anything that they cannot have. If the family is up for anything, I either just double what I already had on the menu for my own family's dinner or I make a casserole so I only have to take over one pan. My personal favorite is the Chicken & Cheese Casserole from Campbell's, You can find the recipe at campbells.com or on any back of a Cream of Chicken soup. Good luck!

My only suggestion is to take dinner in disposable dishes that they don't have to return. From my experience receiving a lot (severe morning sickness and bed rest with my last baby), any meal I didn't have to cook or clean up after was such a gift. My kids always love it when treats are part of the meal -- even a box of popsicles was a huge hit!

I especially like the call before hand and take the meal in disposable dishes...and include a treat!

I knew I could count on you ladies, now to decide which dish to make. Just putting together my grocery list now.

I have a really good casserole recipe that includes some veggies, but it sounds like you may have your dinner! I also take it disposable pans because I hate having to remember to get it back from people. SOunds like you have been super busy! Call me when you have a minute.

I know this is late...but for future reference :)

I make this one a lot because it is super easy and really yummy:

2 cans Cream of Mushroom (or Cream of chicken, or 1 of each. Go wild)
1-16 oz tub sour cream (I'm a light or Fat Free kind of person)
1 packet dry Italian Seasoning mix
2 large frozen chicken breats

Mix everything together in your Crockpot except the chicken. Then add the chicken and cover it with the sauce. Cook on high for 4-6 hours. Shred up the chicken with a couple of forks, stir it up real good, and serve it over rice or pasta. Sadie LOVES this. I think most kids would eat it. A side of corn or green beans or broccoli usually goes well :)

If I'm making dinner for a family with a new baby (like their first baby, so it's really just for two adults) then I'll pre-make individual paper plates of food so they don't have to get dishes back to me. Then I cover those with foil. I like the disposable pan idea though, because often it's not just for two people!

another good tip is to bring something extra. i like to buy a cute dishtowel from ben franklin crafts. they are only $2 and add a cute touch. i will either bake a loaf of bread or something else to put in it. recently i have also throw in a bag of either homemade hot pockets, homemade frozen burrtios or a box of cereal or something that might help the new mom out on another day.
